Chef Anaxi Ayala, Owner and Co-founder; following his culinary passion decided to rely on his own Latino roots and committed to bringing Hispanic flavors out of the shadows to Chicago's competitive catering business. Our Chef developed a new spectrum of flavors by twisting our all time favorite meals with traditional spices and cooking techniques from the Americas.
Our “Culinary Fusion” is an amazing profile of flavors, colors, fragrances and textures that blend together creating delightful menus for our clients. A wide diversity of clients have enjoyed our dishes as our recipe for success resides in our commitment to following a consistent recipe: personalized attention to quality and detail, combined with the finest fresh ingredients and presentation skills. My wife and I primarily worked with Marcela and we can’t express enough how amazing Marcela and her team were throughout the entire process. When we went initially reached out to check their availability and pricing, we received a response right away. Their online program for quotes/invoicing is user friendly and allows for plenty of editing, which is inevitable. During our initial tasting, Marcela and Juliana were so welcoming and provided us with great information. At no point did we feel like they were trying to sell us something, it was just a natural conversation that felt like we had been friends forever. To us, this was so important because the food and service are quite possibly the most crucial part of your event. We wanted to feel like we could trust the people we hired to bring great energy and create a wonderful experience for our guests. After we had officially contracted them, Marcela and her team were always available through email, phone, etc. and put any of our worries/thoughts at ease. Additionally, because they had worked prior events at our venue, Marcela was able to give us a good idea of table arrangements and what would work best in that space. On the day of our actual wedding, Marcela and the Cocina Fusion servers/bartenders were OUTSTANDING!! They were professional, while maintaining a fun and welcoming vibe for all of our guests
